Very good taste as the reputation. Thick in miso soup. The bunch on photo grows on a timber, but it mostly grows on stumps. The top of young caps have flakey splits. Grows in early autumn.

Not bad taste. Too wet for tempura. A little crunchy in miso soup. Grown among cedar litter. Cap is white like a ghost or with a grayish hue. Foot, upper white to gradually reddish brown and hairy below. Common under cedar forest in late autumn to early winter.

Described as fatal. Big and conspicuous white. It is said some panther mushrooms are very delicious, and I tried a bit, but I could not detect any particular strong taste.
Weeping Bolete

A bit tasteful. Abundant on the premises of our institute. There is few toxic species in the bolate family, and they are safe. I expected to be good for soup from its sticky cap, but nothing thick in miso soup. Fairly for tempura.
Slippery Jack

Fairly. Just looks like the former Weeping Bolate, but has a weak annulus. Comes out under short pine trees by a footpath. Fairly for tempura.
Fried Chicken Mushroom

Good! Crunchy texture. Boiling in a soup, it makes very thick. Some old one I collected in Hachimantai, Iwate was not very good because of senescence.

Tasteful. Easily identified. The only white wing mushroom on cedar timbers. It turned out recently that it is deadly toxic for some people mostly with kidney disorders.
Growing on cedar timbers cut down and placed in Aoba Forest Greenery.
Luminescent Mushroom

A representative toxic mushroom. Big and looks tasty, though. Inside the cap root has a dark blotch. Tear the cap to see this blotch. Every year TV news reports poisoning of this mushroom misidentifying as shiitake, but I think it does not look like shiitake as it is said.
Crown-Tipped Coral Fungus

Gooood. Velvet-like surface. Timbers stacked at roadside hold this mushroom. These man-made environments are frequently
good mushroom hunting spots rather than deep forests. Growing one after another, I visited a week later and collected much
again. A tight fungus and keeps its shape for a few days in a refrigerator. Inflated like a ping-pong ball when cooked for tempura.
Crunchy in miso soup, different from dried fungus in the market.
A big bunch on a log by a footpath in a city park. Many people take a walk here. Nobody notices.
Another type of jelly ear fungus found in Yokohama. Soft and gelatinous. Good for Chinese soup with egg.
Both gelatinous and velvet types of jelly ear fungus grow on a stump.

Deliiciooous as an excellent reputation. Quite different from pallid bunch in markets. Light brown cap little bigger than coins
with dark short foot. It is written that foot has velvet-like dense short hairs, but these hairs are so tiny that almost invisible.
Sticky cap looks tasty and indeed thick in soup. Foot looks dried and rough but good crunchy taste when boiled. This photo
shows mushrooms grown on fallen timber, but usually grow on stumps.
Velvet foot harvest. A big bunch.
Sometimes foot is light at young.

Maybe good but... A big bunch. Looked like rum's head mushroom from distance, but turned out to be this species when approaching.
Old stab and not very much tasty.

Magic Blue Gym

Bitter. Looks like very good edible, though. Young cap has a membranous veil. Top of the cap is rough and has small processes. Grown
on cut down young cedars. A reddish one at upper right is one found on a day before in Shiogama, also grows on cedar timber, similar
to this species, but magenta gray inside the cap and not bitter.

Goood but... Emerged after rainfall under a plum tree in my garden. When opens well, the cap flattened or bent upward with sharply
convex at the center. Usually a couple of mushrooms come out together with their feet connected. Heavy. Foot thick below like a pot,
smooth at first, rough when getting old. Good crunchy texture as tempura, but wet body makes the oil burst and splash. Also good for
miso soup. But, smells like sweat, when stewed with soy. Bad.
Big yield of shield pinkgill.
Panther Mushroom

Tasty and toxic. Grown near the Matsushimakaigan Station.

Young guis look like just a mushroom in a fairy tale. Grown under pine trees near the institute. Looking at closely, the panther-like
pattern on the cap can be recognized that it is made of broken
membranous cover of the cap as it grown bigger. Well-known as a typical toxic mushroom, but it has a good strong taste. I tried a bit and understood it is really tasty. A small mushroom on the near side is unknown.
Terrestrial Pholiota

Weakly toxic. Grown here and there on the ground under cedar trees. I colleted them as I thought it was an edible pholiota, but
it turned out toxic consulting with a pictorial book on mushrooms. The book says well opened cap has gill with brownish stain
and this color is characteristic to the toxic species. It is just as seen in the photo. Disappointed.

Yellow Brain Fungus

Soft and delicious. Looks like a yellowish jelly ear fungus. Very soft and lose its shape when washing to cook.

Milk Cap

Bitter. Hot. Looks like very much the popular Hatsudake, but has a fragile foot and milk under the cap. A little bitter and hot just like mushed raddish (Daikon). I think it's tasty.
Yellowilk Cap
